Carrying on with the Hotpot theme (see Chicken Hotpot here) I thought I’d take advantage of a typical British Summer day and do something rib-stickingly comforting and this Cowboy Hotpot is a perfect Winter, sorry, British Summer warmer. Please note: This dish contains no actual Cowboys.
And there’s nothing to it:
Fry some bacon.
Cook some sausages.
Chop up the bacon and sausages and throw in a big dish with two tins of baked beans and some chunks of cheese. You could always add some mushrooms if it takes your fancy. Maybe zizz (is that a word? It is now) it up with some chilli sauce.
Top with finely sliced potato.
Cook in a pre-heated oven at 180C for 45 minutes or until the potatoes on top are done.
Serve with lots of bread and butter, a huge dollop of HP Brown Sauce on the side and a steaming mug of tea.
Eat by the fire while watching Big Brother with a blanket wrapped round for extra warmth.
Ah, you have to love Summer don’t you?
